I think it is far simpler than that. The script needed a pathetic frustration for the character to show that even she is just as human as anybody else. In the face of the apocalypse she was worrying about the snacks. Contrary to our more common idealisation, it shows that deep down even top scientists are not super-human, but regular folks like you and me.
